Description

SafePro B-LC-78 is a starter culture recommended for dry curing whole muscle meats such as raw bacon or pancetta, prosciutto and capocollo. This culture has a high salt tolerance and enhances the formation of pleasant curing flavour and stable colour and has strong antagonistic properties against Listeria monocytogenes and rancidity formation. Culture Compositions:
  • Pediococcus acidilactici
  • Staphylococcus carnosus
Usage (Click here for pdf) SafePro B-LC-78 should be added early in the process to ensure a homogeneous distribution. 25g per 100kg added directly to the curing salt or to the brine. Dissolution prior to use is not recommended. SafePro B-LC-78 Product Details:
