The Stainless Steel Digital Dry Curing Cabinet is perfect for turning plain salami into an charcuterie masterpiece. The Dry Curing Cabinet is ideal for Charcuterie, Sopressata, Coppa and Nduja. Works well with aged cheeses. Dry Curing Cabinet has a stainless steel interior and exterior. The Dry Curing cabinet is low maintenance. Comes with a humidifier that holds two gallons of water. The Dry Curing Cabinet has a cooled compressor/condenser and a gentle heater for fermentation stages. Includes 2 exhausting fans to remove excess humidity. All controlled with a easy to use control panel. A removable drip-guard to protect the humidification fans during early ‘wet phase’. The cabinet has a defrost drainage collection container with a spigot for easy removal of excess humidity. The Dry Curing Cabinet is not intended for dry aging beef.
  • Ideal fermentation conditions, such as Temperature, Humidity and Duration will vary for each salami and starter culture used. Check our website under each culture for optimal conditions.
  • Typical drying temperature range should be 50F – 60F.
  • Typical drying humidity range should be between 70 – 80%.
    • Important Note: The cabinet humidity will range from your ideal setting during this period, sometimes +/- 10%, this is normal, and will not adversely affect your charcuterie.
  • Operating the cabinet at conditions with temperature/humidity settings that are too far apart may force the cabinet to work excessively and can cause icing of evaporator. For example, setting <50F and +90%RH may cause the cooling and humidity to work continuously, producing high volume of frost/ice on evaporator.
  • If undesired wild yeasts or molds are noticed on your salamis, simply wipe down with a diluted (1:1) white-vinegar & water solution and return to cabinet to continue drying.
