Our Natural Hog Casings 29-32mm are an edible casing. These casings are generally used for making Italian sausage, bratwursts and country breakfast sausage. The casings are sourced from Grade-ANorth American hogs only and are whisker free.

One pound of meat will use approx. 2.5 feet of casing. The casings are packed in purified salt and have an indefinite shelf life when stored in the refrigerator. Flush and soak in tap water before using.

  • Natural hog casings are 29-32mm (1 1/8 – 1 ¼) in length*

  • 1 1/8 – 1 ¼ when stuffed- approx.

Preparing Natural Casings 

  1. Remove approximate amount you will need.
  2. Place casings in a clean food safe bowl.
  3. Rinse casings of salt under cool running water.
  4. Flush insides of casings to assist in smooth casing application.
  5. For small casings (<42mm): place bowl in cool water to soak for about 2 hours in refrigerator prior to use.
  6. For larger casings (>42mm): place bowl of beef bung, middles and/or rounds in refrigerator to soak overnight prior to use.
  7. Optional for smell control – add ½ tsp baking soda per cup of water.
  8. Optional for tenderizing – squeeze a lemon or a add a tablespoon of white vinegar to soaking water to refresh casings.

The natural casings should be kept refrigerated until ready for use. Un-refrigerated, these salted casings may give off a strong odor. This is Normal.  Simply put the casings back into the refrigerator and the odor will subside. Natural casings should never be frozen. It affects their integrity after thawing and will cause more blowouts.

    we have bought casings from three different places around LA in the past 10 years, but the quality was inconsistent and they were quite pricey, not to mention the fact that with traffic every trip to get them were about 2 hours long.     I am not happy at all with my last purchased item.
    First at all, it took so long before you shiped it.
    Second, when i got the package, one of the bags with the casings was leaking, so the whole box was wet and started to smell bad.
    I didn’t used the Casings now, so i don’t know yet if they are still good or not

    this is the second time that I ordered these casings and have been pleased with the results. I previously could only find casings locally at the area grocery chain and only during the fall of the year. These casings seemed like they were short leftover ends (the longest were 3 ft) and they had all of these unsightly strings attached that had to be individually picked off. They seemed to split very easily. when i received the casings the Sausage Maker, the first thing i noticed is that these casings were full length. the second thing i noticed was that i had virtually no blow outs during the stuffing process and finally there was none of the unsightly membrane strings hanging on to the outside of the casing. i couldn’t have been more pleased.

Questions and answers of the customers

    Since these are packed in brine, can you just seal the bag back up and store unused in the fridge in the brine they come in? Or would you recommend repacking in salt, adding more brine, or something else? Thanks!

    Hi Bruce,

    You are correct! Once you're done using the casings, you put them back in the fridge in the salt brine they came in. You don't have to add more salt but you can for peace of mind. If you do this, just make sure you rinse and soak them overnight to pull all of the salt out of the casings. If you put the casings back in the fridge, in the salt brine, they will last indefinitely.     Sometimes they come packed in salt, sometimes they are packed in brine. Either way, they are the highest quality.

    Once you receive your casings, feel free to pack them in salt if they arrive in brine.

    Hank – This is the unit of measurement used in buying and selling casings. One hank is one hundred yards of casings. Stuffing a hank of sausage will result in 140 to 150 pounds of raw sausage. Bucket – A unit of sale for casings that is about 25 hanks of casings.
