Description
Our Deer Sausage Seasoning is a gentle blend made for venison — mild enough to let the meat come through instead of covering it with spice. If you have had venison sausage that tasted mostly of seasoning, this is the opposite approach.
Venison is lean, and its flavor is easy to bury. This blend leans on garlic and a balanced spice base rather than heat or salt, so the deer meat stays the thing you taste. It works equally well on beef and on wild game blends.
It is mixed without silicon dioxide, the anticaking agent most seasoning blends rely on. If the seasoning cakes up in the container, it has not spoiled — shake it or crush it with your hand to loosen it.

- 8 lbs. venison or beef
- 2 lbs. pork trimmings
- 8 oz. Deer Sausage Seasoning
- 2 level teaspoons Insta Cure #1
Instructions
- Grind all meat through a 3/16" grinder plate. Grind the pork fat or trimmings through a 3/4" plate.
- Place all ground meat and fat trimmings into a mixing lug and mix well.
- Stuff into 61mm fibrous casings. Perforate the casings with a sausage pricker to remove air pockets.
- Place in a smokehouse preheated to 120–130°F. Apply heavy smoke and hold at this temperature for 3 to 4 hours.
- Raise the temperature to 165–170°F and cook until the internal temperature reaches 152°F.
- Rinse the sausages with cold water until the internal temperature drops to at least 120°F.
- Transfer to the refrigerator and rest for at least 24 hours before slicing.

Casing capacity depends on meat and fill density, the size and length of your links or loops, and how tightly you fill the casings.
