Wiener, Hot Dog, Frank…whatever you call it, they’re delicious. For some reason this emulsified sausage has gotten a bad rap over the years. The kinds of things that some people say are inside them are probably 80% false. I still don’t like those odds; making dogs the way you want them and knowing exactly what’s inside is the peace of mind that this seasoning brings. Use whatever meat you prefer: 100% beef, beef w/pork, veal…etc. But, the point is if you have a good butcher, you will know 100% what’s in the entire final product. Look at the ingredients in this seasoning, spices and a sugar substitute (dextrose)… no unpronounceable chemicals. You will love this seasoning, and so will everyone else.

Uses Insta Cure No. 1 and Soy Protein Concentrate, usually stuffed into a 24-26 mm sheep casing (Insta Cure No. 1, Soy Protein Concentrate and casings sold separately).

Makes 50 lbs. Contains Mustard. Net Wt. 2 lbs.

    Very good mix, great flavor. They came out tasting like a regular hot dog. Only thing I can say is first batch I used the amount of water it says on package, and it was a little dry and hard to stuff in the casings. Next batch doubled the water and it was much easier to stuff.

    By far our favorite seasoning yet. Friends and family all say “we didn’t know you could even make something like this! ” we have found natural casings and a super smooth emulsion of meat in a buffalo chopper is the only way to go. We just kiss them with smoke. We dont fully cook as they get cooked when we eat them. Seem to stay juicier. Highly recommend this product.

    I smoked my wieners on an offset style smoker which dehydrated them before they were Smoked to proper temp. The result? Some of the best tasting venison snack sticks I have ever eaten! If you want wieners get a proper smoking cabinet, and steam finish. You want Awesome venison snack sticks give my mistake a try.

    I used a 50 50 pork but and venison smoked half steamed the other half. I also have a one pound of each in a pickle brine I love pickled bologna the dogs should be good also.

    If you plan on smoking the Wieners, we recommend you add InstaCure #1, or one of our natural cures for protection against Botulism

    Yes, any grind will work great. If you are coarse grinding, you are unlikely to break down the meat enough to impact the water binding capability of the ground meat to justify adding a Binder (such as Soy Protein Concentrate). If you intend on smoking the Weiner Sausage, you should still strongly consider adding InstaCure #1
