Whole Cloves are a useful spice that add warmth and sweetness to baked goods, sauces, meat rubs, marinades and drinks. Whole Cloves are the flower bud of clove tree that hasn’t blossomed yet. When dried they are commonly used as a spice.
Cloves flavor is complex, with notes of sweetness, bitterness and heat. The flavors are strong, pungent, sweet-almost hot. They are one of the most penetrating of all spices and their bitter, astringent flavor leaves a numbing sensation in the mouth.
Sweet and Bitterness
Cloves can be used whole or ground. People often include ground cloves in spice mixes and whole cloves in recipes to add depth and flavor to a wide variety of foods. These small dark brown pods are used in curries, seasoned meats, Worcestershire sauce, baked goods, and chai and Chinese five-spice blends.
