This plastic insert is for use with Jerky Board. It is used to make the slices off the roasts thinner by 1/8″, which is especially good for extra dehydrated jerky for long hikes and camping. Thinner the meat during dehydration is much more likely to increase shelf life due to the minimal available water in the meat that can cause bacterial growth.
