Trail Bologna Seasoning 2lbs 8oz is generally made as a chunky bologna, made with coarse cuts of meat.

Trail Bologna Seasoning
The seasoning contains salt, dextrose, corn syrup solids, black pepper, nutmeg, paprika, Fermento (cultured whey protein concentrate) cultured skim milk, mustard flour and other spices.

Recommended Casings for the Trail Bologna
Usually stuffed in a synthetic fibrous casing, natural beef rounds or natural beef middles.

Helpful Tips
Because Trail Bologna is smoked, Insta Cure™ #1  (sold separately) needs to be added to the recipe.

Allergens: Milk, Soybean oil used as a mixing aid.

    Hi Alan,

    Customers can make any product in any size casing that they prefer. So yes you can, but this may change the cooking time and recipe. I would email our kitchen specialist John at [email protected] to ask him if it would change the amount of time it would take to smoke or cook.

    A Been stuffing in large sandwich size casings for years. Cook to internal temp as stated and they work just fine
