With our Trail Bologna kit you can make great tasting bologna at home. Makes 25 lbs. of sausage.

Fresh or Smoked
The trail bologna can be made fresh or smoked. If you don’t have a smoker and you want a smoked taste, just add the liquid smoke to the meat before stuffing it into the casing. 

Trail Bologna Seasoning
The seasoning contains salt, dextrose, corn syrup solids, black pepper, nutmeg, paprika, Fermento (cultured whey protein concentrate) cultured skim milk, mustard flour and other spices.

Trail Bologna Kit consists of:

Fibrous Casings
A fibrous casing generally used for making a salami or a summer sausage. The fiber in these casings runs lengthwise which makes them strong so they can be stuffed tighter without breaking. They smoke just as brown as a natural casing. No need to be refrigerated, these casings are shelf stable due to being plant based. Soak 10-30 minutes in tap water before using. Not edible, peel off before eating.

    Yes. It is far too moist to be shelf stable.
