We’ll we had a small sausage making party last night. I decided to make Sweet Italian Sausage for my first go round because I could buy the seasoning and it would be a little easier. After we ground the sausage and mixed the seasonings we fried a few small samples. It was very salty and I was afraid I might have wasted my money but went ahead and made the sausages. They turned out great, I guess the trick is you have to give the seasonings time to meld into the meat. We really enjoyed it and 10 # of pork shoulder made about 40 sausages about 6 or 7 inches long

We have ordered from Sausage Maker before and haven’t had any problems before. This order however has been a little frustrating. When we opened our order we found an item we didn’t order. It was not on the invoice. The sweet Italian sausage seasoning was on the invoice but now in the box. I have called twice. Once each of the next two days. They made a note of the problem and was sending to a different dept. They said they would call, but they are short handed right now. Never heard from them. Ended up having to reorder the seasoning and pay shipping that was almost as much as seasoning. Now A week later and still haven’t heard from them.

I ordered this mix back on 9/25/2021 and found the mix to be way too salty. Why not leave the salt out of the mixes? It would cut down on shipping costs and I can add kosher salt myself. That way if the sausage has too little or too much salt I have nobody but myself to blame. After leaving my negative review online for a couple months it has now been deleted by The Sausage Maker. Have you noticed all reviews appear to be 4 or 5 stars? If the company isn’t going to post all reviews they have a basic honesty problem with their management or employees.
I tried this seasoning for mild Italian sausage and found it to be way too salty. In the 1# 8oz. example I used more than 1# of the mix was just salt. I have taken to making my own blend without all the salt.
Provides a very nice and mild italian sausage flavoring. I read some reviews that said it was salty. When I looked in the jar, I did notice that the salt was separating from the rest of the seasonings making it difficult to get a good mixture, so I just ran the whole jar through a bullet food processor to grind it together fine and put it back in the jar This worked out very well, no salty taste.
