Description

The Stainless Steel Digital Dry Curing Cabinet is perfect for turning plain salami into an charcuterie masterpiece. The Dry Curing Cabinet is ideal for Charcuterie, Sopressata, Coppa and Nduja. Works well with aged cheeses.

Dry Curing Cabinet has a stainless steel interior and exterior. The Dry Curing cabinet is low maintenance. Comes with a humidifier that holds two gallons of water. The Dry Curing Cabinet has a cooled compressor/condenser and a gentle heater for fermentation stages. Includes 2 exhausting fans to remove excess humidity. All controlled with a easy to use control panel.

A removable drip-guard to protect the humidification fans during early ‘wet phase’. The cabinet has a defrost drainage collection container with a spigot for easy removal of excess humidity.

The Dry Curing Cabinet is not intended for dry aging beef.

  • Ideal fermentation conditions, such as Temperature, Humidity and Duration will vary for each salami and starter culture used. Check our website under each culture for optimal conditions.
  • Typical drying temperature range should be 50F – 60F.
  • Typical drying humidity range should be between 70 – 80%.
    • Important Note: The cabinet humidity will range from your ideal setting during this period, sometimes +/- 10%, this is normal, and will not adversely affect your charcuterie.
  • Operating the cabinet at conditions with temperature/humidity settings that are too far apart may force the cabinet to work excessively and can cause icing of evaporator. For example, setting <50F and +90%RH may cause the cooling and humidity to work continuously, producing high volume of frost/ice on evaporator.
  • If undesired wild yeasts or molds are noticed on your salamis, simply wipe down with a diluted (1:1) white-vinegar & water solution and return to cabinet to continue drying.

    Yes... you want to be able to monitor the daily release of moisture from your salamis. Unless you are monitoring the weight loss regularly, I would leave the side tank in place.

    Oh, absolutely!!! However, once you inoculate the cabinet with mold, its rather difficult to remove it. If you choose to make salamis without molds, you will need to begin to use Potassium Sorbate on the exterior of the unmolded salamis to inhibit mold growth.

    YES!!! The temperature range is from 41F - 99F, and Humidity range is from 0% - 100%. You can control both independently, so fermentation and drying can be done in the same cabinet without moving any sausages from space to space.

    I had once put 75 lbs of salamis in my cabinet. I don't recommend anyone do that, as the increased humidity from that amount of meat in that small of a space will cause some molding issues, and really push the cabinet hard. I would say 50 lbs is a good maximum amount of salamis to hang at one time, from fermenting to drying.

    There are 4 low velocity fans located at the bottom of the cabinet (mounted on top of the water reservoir) which turn on only when the cabinet requires humidity. The air flow is also deflected away from directly impacting the salamis surfaces so they will not dry excessively at their bottom ends. There are also 2 more fans located at the top back of the cabinet which will automatically remove excessive humidity if the cabinet conditions require it.

    No, the cabinet has a small reservoir on it side that collects all the condensed humidity and moisture from the chamber and from the sausages. Its very easy to drain out and will not mess up your floor.

    No damage will occur... the cabinet will not operate efficiently. Your salamis will not dry properly because the ambient temperature outside will affect the inside temperature and how well the mechanicals work. This is why we recommend it be installed indoors.

    To properly dry age BEEF PRIMALS without  SALT or CURE, the refrigeration needs to be 38F. Our unit is designed for salamis and cured meats only and reaches the lowest temperature of 41F.

    40F is the bottom end of what is called the "TEMPERATURE DANGER ZONE", which ranges between 40-140F. This is when all bad bacterial growth occurs, and without any sort of protection from even salt, your meat will be sure to spoil quickly.
