    The quality of the ingredients were great. sausage tasted awesome. I din’t like the instructions because it didn’t call for any water. I called customer service and the said if it wasn’t on the instructions then I don’t need it. Well, trying to mix it without water was difficult. All other kits and scratch recipes I have used called for water so I added some and it worked out great. Also the cure direction talk about a brine by mixing 3 with water. But 3 what?

    Just finished making this with 60% white tail and 40% pork butt, left out the hickory flavor and added 2 lbs of high temp cheddar to 25 lb batch. Tastes great! 5 stars for sure.

    Wish the kit would have included instructions on how to portion down the ingredients for smaller batches. 25 lbs is a lot to take on, especially if you don’t know whether or not you’ll care for the flavor.

    The recipe didn’t call for water but I had no choice but to add some it was so dry I couldn’t crank my meat mixer and I wasn’t even finished adding seasoning

    Pork is the primary protein used in this kit. You may use a combination of Pork and Beef, or Pork and Venison too, but there should always be a minimum content of 20% fat.

    You should first smoke, and then poach.

    This kit can be used with any protein. However, when making any sausage we recommend at least 20% fat be incorporated into the mix.
