Description

Our Smoked Pepperoni Seasoning is a well spiced and mild-hot blend for coarsely ground sausage. With perfect proportions of white and black peppers, counterbalanced with garlic and hints of onion.

Unlike the overly difficult dry-cured pepperoni recipes, this blend is for the cooked variety. While you can use 100% pork for this recipe, dropping it down to 50% with the other half being lean beef chuck works exceptionally well.

  • Uses Insta-Cure No. 1
  • Can be stuffed into a casing of your choice
  • Insta-Cure No. 1 and casings sold separately
  • Recipe on package, makes 50 lbs.

    I bought a bunch of SausageMaker products as I’m spooling up and learning to Smoke and BBQ. So far, everything is scrumptious and as advertised.     I normally make my own spice blends but wanted to try making smoked Pepperoni and The Sausage Maker has a recipe made exactly for that. Plus, it was on sale and rounded out my order so I could receive free shipping. When the spice mix arrived, I opened the box only to find that the ring around the top of the jar lid had been broken during shipping.     Hi Diana,

    The smoked pepperoni contains normal onion and garlic powder. So it would taste just like any onion powder you purchase in the store.

    Not very strong

    A Onion is not a predominant flavor in my opinion. The flavor would be subtle if you were even able to pick up on it. For me, it is a stronger garlic, fennel, paprika flavor.
    A I agree, not a lot of onion flavor at all. In fact I don't think I even thought of onion. However, I did add smoked paprika and I think that was a good idea.
