The Smoke Pepperoni Seasoning is made in-house from an old, traditional, authentic pepperoni recipe from Master Sausage Maker Rytek Kutas himself. Complete with recipe and instructions. Kit makes 25 lbs. of sausage.

- 4 oz. Liquid Smoke
- 1 oz. of Insta-Cure™ No. 1
- 14 oz. Soy Protein Concentrate

My wife and I really enjoyed deer venison pepperoni in our calzones. The prep time with some pre-made dough was about five minutes and the flavor of the pepperoni was awesome. I never thought I’d enjoy making sausages so much and can hardly wait until the next opportunity.

good kit… this was my first time working with a natural casing and it was a bit tricky but it worked out in the end. the initial flavor was a bit weak but some dry aging for a few days the flavor really improved.
