Description
Saffron, the world’s most expensive spice, is picked by hand and one flower yields only 3 stems (or stigmas as called in the spice trade). It requires the harvest of 225,000 stigmas to produce 1 pound of saffron. The best saffron comes to us from Spain. It’s used in European recipes for cakes and breads, and also with chicken, seafood chowders, casseroles & fried potatoes. To develop a golden color and flavor in rice, place a pinch into boiling water before adding rice. Use 12 Mancha Stigmas to 2 cups of water and 1 cup of rice.

I was lucky to stumble upon The Sausagemaker spices several years ago where I discovered the 1oz pure saffron available. It is rather pricey; however, The Sausagemaker beats any other pure saffron retail price available elsewhere which are usually sold in ridiculously small packages. I use a lot of saffron in soups and rice dishes, so itâs great to have a good supply on hand. I usually buy the 1 oz package every couple years, but it is delivered in a well sealed bag within a tight tin container so it stays fresh for a long time.
