There is NO drainage needed for this Ager! Temperature is adjustable from 33 to 40F, the sweet spot of aging is easy to find. Age your whole Ribeyes, Primal/Retail Cuts and Roasts at a slightly higher temperature to allow for native enzymes to break down the tough parts of the lean muscle tissue, then once they are aged to your liking (21-45 days) wrap and lower the temperature for longer storage! With the two-door model, each door opens a separate cabinet interior that can be controlled to different temperature setting.This Ager encourages clockwise air circulation within each section between shelving at spacing to fit your meat while circulating air from Back to Front motion.
