When choosing the meat for the recipe, you can use whichever you prefer, we recommend doing half lean chuck and half 80/20 pork butt.
Pack into Beef Round or synthetic casings. For smoking use InstaCure #1 and Soy Protein Concentrate (Cure, Soy Protein, and Casings sold separately).
