Our Red Hot Sausage Seasoning is for the people who love hot sauce and don’t think there is ever enough or strong enough available. If you tried our Hot Pork Sausage Seasoning and it still didn’t cut it, here you go. While this seasoning is fiery, it doesn’t kill the naturally delicious taste of the pork. For Red Hot Snack Sticks, use 22-24mm sheep casings and for sausage use 32-35 or 35-38mm hog casings. If smoking this recipe use instructions from Polish Sausage, excluding Soy Protein requirement. Makes real good burger patties, too.
Uses InstaCure #1 if smoking. Cure and Casings not included.

These sausages take us back to when we lived in Rota, Spain. The air terminal sold “Red Hot” sausages and these remind us so much of them. A real treat.
