Description

Pre-tied Mahogany Collagen Casings 47mm is pre-tied at one end for your convenience. It is ideal for cooked, semi-dry, and dried sausages. Each casing will make approx. 1 1/3 lbs. of sausage.  No need to be refrigerated. Casings are non-edible, peel before eating.

  • Non-edible. Peel before eating
  • For cooked, semi-dry, and dried sausages
  • 10 casings per pack
  • Size: 47mm (1 7/8″) x 24″
  • Each casing will make approx. 1 1/3  lbs. of sausage*
  • Soak for no longer than 5 minutes
  • Use 3/8″ hog rings and pliers to clip the end of the casing closed or butcher’s twine to tie the end close
  • There is no need to be refrigerated, these casings are shelf-stable

*Casing capacity depends on meat/fill density, size/lengths of links or loops, and how tightly casings fill.

    I use these casings for my pepperoni and love the way they fill and tie off. I don’t get any blow-outs at all. I don’t smoke my pepperoni but I do hang them in a dry, cold area for up to three weeks after getting the sticks up to 160 degrees for an hour. After the heat they are allowed to cool naturally and then are wiped and hung. I spray them with a mold retardant a day or so before I take them down, give them a quick wipe and then they are off to the package. The casing does a nice job of shrinking with the meat as they dry so air pockets simply don’t happen yet just before slicing for use the casing easily peels off. Great product here and the perfect “pizza” pepperoni size.

    good quality… but because of the low permeability of this type of casing and a little bit aggressive smoker temp, I blew some of these up. totally my fault, the casings are great, just don’t run a temp that will make a bunch of steam fast (350 F) on recipe with high moisture content.
