Description

Natural Beef Rounds 35-38mm are a natural sausage casing. Ideal for fresh, cooked or smoked sausage such as Ring Bologna, Polish, Mettwurst, Holsteiner, and Blood Sausage. These casings are non-edible.

The casings are packed in purified salt and have an indefinite shelf life when stored in the refrigerator.

Beef casings tend to be more dense and unpleasant to chew. They are typically pealed after cooking and for that reason are considered non-edible. Casings should be flushed inside and out with cold water, rinsed thoroughly and soaked in water overnight.

  • Recommended seasonings: Ring Bologna or Trail Bologna

Preparing Natural Casings 

  1. Remove approximate amount you will need.
  2. Place casings in a clean food safe bowl.
  3. Rinse casings of salt under cool running water.
  4. Flush insides of casings to assist in smooth casing application.
  5. For small casings (<42mm): place bowl in cool water to soak for about 2 hours in refrigerator prior to use.
  6. For larger casings (>42mm): place bowl of beef bung, middles and/or rounds in refrigerator to soak overnight prior to use.
  7. Optional for smell control – add ½ tsp baking soda per cup of water.
  8. Optional for tenderizing – squeeze a lemon or a add a tablespoon of white vinegar to soaking water to refresh casings.

Refrigeration
The natural casings should be kept refrigerated until ready for use. Un-refrigerated, these salted casings may give off a strong odor. This is Normal.  Simply put the casings back into the refrigerator and the odor will subside. Natural casings should never be frozen. It affects their integrity after thawing and will cause more blowouts.

    Hi Bill,

    Yes you can! Natural casings are great for smoking because they're very permeable, so the bologna will come out having a nice smoked flavor. These are a thicker part of the intestine than small hog or sheep casings, so you have to peel these off before eating them because our stomach cannot digest such a thick casing.     They are Edible...technically, but they are very tough and chewy, and also don't digest as well as the thinner-walled natural casings from Hog/Sheep. Their purpose is more utility, eating them is not typical. They CAN be softened by soaking the Rounds (same with Middles/Bungs) with 1-2 teaspoon white vinegar per 4 oz water when soaking. The smell dissipates and the acidity tenderizes the casings. Hope this helps!
