Insta Cure™ No. 1 is a simple, easy-to-use cure for any meat that requires cooking, brining, smoking or canning. This includes smoked sausage, poultry, fish, ham, bacon, luncheon meats, corned beef, and plenty more. Formerly known as Prague Powder No. 1, the Sausage Maker’s blend is a basic cure containing salt, 6.25% sodium nitrite and an anti-caking agent.

Curing meat helps to prevent common food poisoning caused by Clostridium botulinum and other related bacteria. Cured meats are safely preserved and tend to take on more complex, robust flavors and colors.

  • Use one level teaspoon per five pounds of ground meat
  • 5lbs. Insta Cure 1 will process approximately 2,400 pounds of meat
  • Net weight: 5lbs.

For a basic bacon or ham brine (not including additional flavor ingredients), mix:

  • 1 gal. water
  • 4 oz. (½ cup) Insta Cure #1
  • 1 lb. 5 oz. (1¾ cup) salt
  • 1½ oz. (2¼ Tbsp.) sugar

    The product quality is exactly what I expected, good. However, I ordered both #1&2 Cure the package arrived damaged and Cure was everywhere with no visible hole or crack in the container.     Great question Jay, but the answer is a little more complicated. If your intention is to low-slow smoke the hams, then you should include InstaCure#1 in a brine (aka 'pickle'), at 3-4 ounces per gallon along with other ingredients (salt, sugar, spices/herbs) and pump 10% of the ham-weight into various areas of the ham... to ensure Nitrites are added into the center-most areas that the brine would otherwise have trouble absorbing into the deep/dense sections.

    With dry-curing recipes like making prosciutto, you would not need to use Cure#1 or Cure#2 as part of the rub-cure, all you need is coarse, 'kosher' (non-iodized) salt to thoroughly rub onto the surface area of the muscle. Then the product is typically dried to a lower water-content, monitored and weighed periodically. When the muscle uniformly loses approximately 35-45% of its original (aka 'green') weight, it is considered 'done' or ready to eat. There are too many factors and nuances to look for to list here, we highly recommend Art of Making Fermented Sausage by Stanley Marianski as the best reference to read/understand.
