Description

Insta Cure™ No. 1 is a basic cure for use with all meats that require cooking, brining, smoking or canning. This includes poultry, fish, ham, bacon, luncheon meats, corned beef and other products too numerous to mention. Formerly known as Prague Powder No. 1, the Sausage Maker’s USDA-approved cure formula is a simple 1lb. sodium nitrite cure containing salt, 6.25% sodium nitrite and an anti-caking agent.

Curing meat prevents botulism poisoning (common food poisoning). This process also helps to safely and effectively preserve the meat while imparting more robust flavors and colors.

  • Use one level teaspoon per 5lbs. of ground meat
  • One pound Insta Cure 1 will process approximately 480 pounds of meat
  • Packaged item dimensions: 8″ L, 7″ W, 1″ H
  • Unit weight: 1 lb.

For a basic bacon or ham brine (not including additional flavor ingredients), mix:

  • 1 gal. water
  • 4 oz. (½ cup) Insta Cure #1
  • 1 lb. 5 oz. (1¾ cup) salt
  • 1 ½ oz. (2¼ Tbsp.) sugar

    I’ve been using the Sausage Maker’s Instacure #1 for several years now and have always found it to be fresh and free-pouring for easy measurement. A little goes a long way (1 tsp will do 5# of meat!) so a pound of it will make several home-sized batches of sausage.

    We used the recent purchase of cure and dextrose powder to make up a large batch of liverwurst and braunschweiger from beef heart and liver from a pastured raise steer that was just slaughtered.

    I recently made venison hotdogs with the sausage maker mix . I added high temp cheddar and jalapeno they came out fantastic. I also made the original snack sticks,they are vary bland I would try a different one. Make sure that you order 75 bucks worth of stuff or shipping will killing you. The trail baloney isn’t to bad either I like to fry it.

    I brine and smoke a good bit of meat in the form of pork bellies for bacon, beef briskets for corned beef and pastrami and cold smoke fish like salmon. This product is not available in the local markets so ordering it on-line is the way for me to go and I’m glad your company offers it.

    I’ve only used the InstaCure once. My pastrami turned out a bit salt, but I let it cure for 72 hours so that’s my fault.
    My frustration is that I couldn’t get the InstaCure delivered for less than $14 in shipping. I spent $4.73 for the InstaCure and over 3X that in shipping.

    You should always weigh all salts and curing salts. Yes, they are the same thing... SODIUM NITRITE

  2. I will be making a 24hr marinade with soy sauce, Worchester and a little water for whole muscle jerky. Would I follow the brine measurements for the amount of liquid marinade used to cover the meat? Half gallon of marinade would call for 1.5oz of cure, is that right?
