    Great tasting. After the taste test of the batch, some wanted more garlic so I split the batch and added some garlic powder. Now everyone is satisfied.

    As the title says , needs black pepper . Overall pretty good more of a Brat style flavor . I made 35#s of this sausage with venison and 35% pork . I ended up adding approx. 5 tbl. spoons of black pepper to half of it . Waaay better than original .

    This is an excellent mix if you have family members or friends that don’t like fennel (it tastes Italian to me, without fennel). I have made 5# batches with 4# beef, 1/2# pork, 1/2# bulk bacon. Grind mostly frozen thru a 7mm plate.

    The Sausage Maker has truly the best seasoning blends out there. I used to pride myself on making my own blends, but in a rush once I used their Deer sausage seasoning. My family loved it! So, I tried a few more, and they are always a huge hit. The seasoning never dominate, but are balanced and compliment the meat.
    They are truly the best!

    The only seasonings that have NITRITES included in them are our bacon, ham and corned beef cures. All of the sausage seasonings have just purified salt. If you wish to cold smoke, you will need to add 0.25% InstaCure #1, or #2, depending on the length of your drying time expected.
