    Product arrived promptly and in good condition. Included video was helpful. Directions seem straight forward and easy to follow. Have not been able to use the kit yet. More information on curing process for kit would have been helpful. Currently I do no have a way to maintain salami at proper temperature and humidity required.

    Hi James,

    If you're dry curing you have to use cure #2. You can use bactoferm but it is not required, but it can help the final product in certain ways, as some of them have added listeria protection, or help give a sour tangy taste that some sausage maker's enjoy.
