Description

A long time favorite of very many of our return customers. Our Dried Sausage Sticks Seasoning has a mild flavor that doesn’t choke you with some “secret” spice that 9 out of 10 times is more pepper. This blend strikes the perfect balance of flavor brought by it’s contents and by allowing the meat to come through also.

  • Contains Fermento (Milk Product)
  • Uses Insta-Cure No. 1 and stuff into 19 mm collagen casings
  • Insta-Cure No. 1 and casings sold separately

    Made 1/2 of the batch with red pepper added ..My next order will have the larger can and some cheddar cheese chunks ..

    The seasoning is great. The directions could have been more detailed. The directions state to smoke for 3-4 hours at 120-130, then raise the smoker temp to 165F and cook until the temp reaches 152F. This took forever!! I had to increase the temperature of the smoker to get it done so I could go to bed. But had the instructions indicated that it would take 10-15 hours, I would have smoked it from 6-10pm, then gone to bed. I am looking forward to trying it again using what I learned. Once I figure it out, it will be delicious!

    Absolutely! When mixing pork with Venison, use at least 25% pork
