Dried Sausage Sticks Kit is perfect for those who enjoy Polish Smoked Stick (aka “Kabanos”). Traditionally, Kabanos is a pork sausage, but works wells with: pork, beef, wild hogs, bear, venison, duck or goose, etc. Kosher versions use chicken or turkey. If using venison, cut with pork fat.

Dried Sausage Sticks Seasoning Ingredients: salt, black pepper, white pepper, garlic, celery, onion powder, caraway, coriander, dextrose, corn syrup, milk and other spices. The seasoning has a pleasant pepper/tangy taste. Fermento can be added for a more tangy flavor.

Each Kit Contains:

  • 1 lb. – Dried Sausage Sticks Seasoning
  • 19mm Collagen Casings*
  • Insta-Cure #1
  • Natural Hickory Liquid Smoke
  • Instructions on label
  • Kit makes 25 lbs. of sausage

When not in use, casings should be kept refrigerated, sealed in the original package.

    Made 5lbs so far and very easy and great tasting. Will use more fat in the beef as it was a bit dry but an easy fix. Chalk it up to my lack of experience.

    everything seems OK. I do have a concern with only using 1 tsp of cure/5#s and cooking to only 152 degrees instead of the usual 165. My oven only goes down to 180 degrees so cooking time was only 75mins, how should I deal with that?

    The kit was suppose to have 19mm collagen casings in it which didn’t. Called sausagemaker and the lady was real nice. She apologized and said she would ship them no questions asked.

    If you’re trying to make for the first time this will get you where you need to be. Fine tune your own off this or still good as is too.

    Sorry this recipe didn’t work out for your taste Kevin, the recipe is basically a Polish Smoked Stick (aka “Kabanos”), those Poles love their Caraway! Sausage or sauerkraut, it will often have Caraway. It is a distinct flavor and not for everyone.. so we will make the product description clear about the Caraway presence. I hope you were able to gift the 5 lbs. and rest of the Kit.     I want to change my 3 star rating to 4. After 7 hours of smoking, the caraway went away. You can delete my 2 star review.
