Cellulose Casings 30mm are a non- edible casing that are used to make larger skinless hot dogs/franks or bratwurst. Very permeable, these will allow the product to take on a smoked flavor if used in the smoker. Most common size for deli or grill sausage.

What Are Cellulose Casings
Cellulose skinless casings combine high elasticity with very consistent diameter, providing the right shape for skinless sausage. They are highly permeable for excellent smoke absorption and color. Excellent peelability guarantees trouble-free processing. Most cellulose skinless casings are striped to help avoid non peeled casings. Cellulose skinless casings are manufactured in shirred sticks that do not require soaking.

      No, fresh sausages should not be made with these casings unless you intend to fully cook them before freezing. The casings need to be peeled off before freezing and after cooking.

    2. Can I use these casings for vegan sausages that requires steaming the sausages once stuffed. Can these casings hold up under steam? Once cooked I will remove the casings from the sausages. Is there any concern regarding cellulose being in contact with the edible sausages? Do they leave behind any off tastes or chemicals with the vegan meat?

      Cellulose casings will be fine for vegetarian/vegan sausages. There is no need to remove the vegetarian casings, they are very tender. They will hold up to steaming.
