Description

Cellulose Casings 25mm are a non- edible casing that are used to make larger skinless hot dogs/franks or bratwurst. Very permeable, these will allow the product to take on a smoked flavor if used in the smoker.

What Are Cellulose Casings
Cellulose skinless casings combine high elasticity with very consistent diameter, providing the right shape for skinless sausage. They are highly permeable for excellent smoke absorption and color. Excellent peelability guarantees trouble-free processing. Most cellulose skinless casings are striped to help avoid non peeled casings. Cellulose skinless casings are manufactured in shirred sticks that do not require soaking.

In order to ensure the best possible stuffing performance, the cellulose skinless casings are packaged in caddies that seal in the moisture and preserve the casings for storage. Cellulose skinless casings are available in many size for hot dogs, frankfurters knackwurst, smoked sausage, and fresh chorizo.

      Worked ok for me. They don’t twist for links very well, and won’t hold a twist if hanging vertically unless you tie them at each link or laid them down. The stuffed easy. I used a water bath to cook up franks, then they peeled off fine after cooling.

      Yes, these casings can be poached and they take smoke well also. Do not exceed 170F when cooking any sausage, otherwise fats render out at temperatures above 170F and the results are dry and crumbly sausages.

      The cellulose casings are permeable enough to allow for smoke to penetrate, but not liquid.
