Celery Juice Powder contains naturally occuring nitrites and nitrates (which breakdown to nitrites with the help of bacteria native in meat itself).

Celery Juice Powser  (aka CJP) is now commonly being used for giving sausages and meats a cured appearance and taste without the use of synthetic sodium nitrite/nitrate. There is no standardized, USDA recommended curing time for specific amounts of CJP for consistent curing action so products using vegetable based nitrites/nitrates (such as CJP) must be cooked prior to consumption.

CJP may clump/harden during transit in the summer months. It is not spoiled and has not lost effectiveness. Simply break up and/or use as weight measure instead of volume if this occurs to your CJP order.

Recommended Usage
0.2% – 0.4% of Celery Juice Powder of total weight of ground meat will bring sausage to 100 – 200ppm nitrite

  • Net weight per packet: 1.25 oz.
  • Yield: approx. 1 oz per 20 lbs. of meat
  • Dimensions: 8.25″ L, 6″ W, 0.25 H

*The USDA currently does not recognize naturally occurring nitrates as effective curing agents in meats, so if using Celery Juice Powder for products being sold to the public, the end-products must be labeled “Uncured”.

**The use of natural products, such as Celery Juice Powder, which contain nitrates are NOT recommended for making bacon.

    I love this product Celery Juice powder. However on My last order the celery powder arrived in fine form but when it came time to use it it was all stuck together in a clump. After some frustration I discovered it dissolves in water and was able to proceed in making sausage.

    Yes, the larger jars which we sell are from a different supplier and a higher grade CJP. Its ultra refined, has no residual celery flavor in your meat, and is totally water soluble and does not clump.

    I also recommend the beet juice powder. 

    Both of these are natural substitutes for InstaCure #1

    You will use 0.2 - 0.4% CJP by weight in relation to the weight of your meat, OR 200 ppm when dissolved in water

    You get 1 packet @ 1.25 oz. for $12.25

    I recommend the 8 oz Celery Juice Powder (11-1042) from a different manufacturer, which is 100% water soluble and flavorless. This is also a far superior product, and also less expensive.

    The beet juice powder is also an excellent alternative to celery juice powder.
