Description

Bactoferm HPS is our latest and FASTEST acting culture. It can drop pH down to about 4.8 within 6 to 12 hours, depending on fermentation temperature, using 2% DEXTROSE sugar. It will acidify extremely quickly but, is not purposed for flavor development, so that’s where the spices come in!

Save yourself the pitfalls of prolonged fermentation times that can last over 24, 36, and sometimes 48 hours. No more worrying about water-logged separating casings from prolonged exposure to high humidity, uncertainty of pH levels over long ferment times, keeping the fermentation environment optimal overnight without checking, and so many other issues that can arise from long fermentation phases.

Bactoferm HPS is used by most major commercial production plants for American-style, fermented, and dry-aged sausages such as Summer Sausage and Pepperoni. Bactoferm® HPS allows super fast reduction in pH and shelf stability in less than half the time of other culture products.

Testing
To test if the bactoferm is still viable, simply shake the package. If the bactoferm is loose when shaken, like sand, then the bacteria are alive. If the bactoferm is clumped together and does not sound loose, the bacteria have died and should not be used.

*Always Test new Starter Cultures first with test chubs that have the same diameters and environments as the rest of your production run.

Use 2g per 5kg of Meat dissolved in unchlorinated water OR
Use 0.0025 lbs (0.04oz) per 10 lbs. Meat dissolved in unchlorinated water. This is roughly ¼ tsp per 10 lbs., this is a more concentrated starter culture, and usage amounts should be adhered to.

Delivery and Storage
Due to the limited shelf life outside of a freezer, Bactoferm cannot ship outside of North America. Place Bactoferm in the freezer immediately upon delivery and after use.
