Now you can make hotdogs entirely made up of the most natural ingredients available, in a premixed seasoning. Using this seasoning you can enjoy hotdogs without the use of Sodium Nitrite, in this case you should NOT smoke the product at temperatures under 190F, cook or freeze immediately to prevent spoiling. You should NOT rely on celery juice powder for curing meats. Makes 50 lbs.

This seasoning can be smoked without Sodium or Potassium Nitrite (Cures) by substituting with Celery Juice Powder, and smoking at temperatures over 190F.Makes 50 lbs.

    A good vegetarian wiener is hard to find, but I think I’m on the right track for making my own seitan wiener using this spice blend. My first attempt was too salty, but the second was much better, I think the third time will be the charm.
    Definitely worth experimenting with. I look forward to trying other “Sausage Maker” spice blends for making more
    meat alternative sausages!

    Salt is essential in the production and preservation of sausages including hot dogs. There is 980 mg sodium per 4.25 oz serving (link). There really isn't a low sodium answer for hot dogs as salt helps to retain moisture also and helps with the emulsion.
