Description

Summer Sausage is one of the most popular sausages in America for a reason, it’s inexpensive to make, has a long shelf-life and is delicious! This seasoning is made of all naturally procured and minimally processed spices and ingredients to enhance the flavor of the classic Summer Sausage.
This seasoning can be smoked without Sodium or Potassium Nitrite (Cures) by substituting with Celery Juice Powder, and smoking at temperatures over 190F. Makes 50 lbs.

    Haven’t used it yet so it wouldn’t be fair to grade it just yet, but when I do I’ll let you know.

    Perhaps because of the “natural” makeup they have to use more salt. Kind of overpowered the taste! The texture of the sausage was a little dry but that may have been my problem!

    This product is easy to stuff into the mahogany fibrous casings.
    After using this products I found a few things that make the flavor come out. Make sure you let the mixture sit 3-5 days before curing.
    Let the sticks air dry 4-5 days after cooking.

    This is a great seasoning for those that want to use a natural product. Use Celery Juice Powder in stead on InstCure#1, Great tasting summer sausage!

    Was pleased with the products and they performed as advertised. Shipping could use some improvement tho. Already had my shipment before the email got to me telling me it was on its way.
