A clear smoked collagen casing used for bratwurst, Italian sausage, and dry cured pepperoni. These casings are made to be more durable to carry the weight of the meat when hanging on a smokehouse stick. Made from the hide of cattle. Totally edible. Keep refrigerated.

  • Approximately 1 1/4″ when stuffed

    I’ve used these a couple of times making beef sausage and they worked perfectly. Good on my venison with green chili sausage, too. Much easier to deal with than pig casings since there is no flushing of “stuff” out of them or anything like that. They’re made from beef hide scrapings that are molded into tubes so it’s “all beef” and no chemicals or fillers.

    Held up good while stuffing it. I think I might have overstuffed it since the casing pealed from the venison brats I made when I cooked them. Don’t think anything was wrong with the casings itself.

    A little difficult to work with and you need to cut the piece small enough to get it onto your Funnel extension as you can not load the entire piece unless your Funnel is different that mine.

    Will these casings be twisted to link sausage together?

    Hi Steve,

    I asked our kitchen specialist and he said collagen casings will be very hard to link together like that with a twist. He said they can rip if you twist them, it would work better if you do a longer sausage then twist, rather than shorter.

    Natural hog or sheep casings work best for twisting to make links :)
