The Sausage Maker’s 30 lb. Red Roof Digital Country Style Smoker design has a larger interior height. The additional height allows you to hang longer fish, larger ham, more sausages and bigger bologna.

Removable Top
The top is removable to make both the loading and unloading of meat easy. The cleaning process is easier than with front-only loading models. The smoker has a 10 shelf capacity and extra bracket for hanging meat.

    I have a small electric water smoker…but this tops it over and over again…we use the smoker to season with smoke…we take the chips it for the final hours of cooking…don’t like it over smoked…

    I drooled over this for several years before getting it. Fortunately my tax refund this year worked out in my favor, leaving enough for both the mrs. and myself to get a toy. This is a great backyard smokehouse. I didn’t think about it at the time, but the slanted roof gives you a lot of extra room for hanging things. I was struggling with my old junk smoker from Wally world, which barely had room to hang anything without it touching the sawdust. The smoker lives in my garage when I’m not using it, and since it has wheels it’s pretty easy to move. For easy cleaning without much too much chemicals, I warm up the smoker just a bit and add some water the sawdust pan. Shut the door, let it steam up a bit and then of coarse turn it off and unplug before scrubbing it down. Watch the burner though it’ll be hot. – Don

    Used smoker for fist time on 20# of venison sausage. Great results thou will take some time to get used to the smoker heating temps. Overall, smoker seems well built, thou the handles for moving the smoker seem very weak, hopefully they will last. Look forward to the next batch.

    The smoker arrived broken. FedEx must have dropped something heavy on it as the front legs were both bent and the roof had minor damage. The container broke open and evidently the individual temp probes feel out. I was surprised at how well constructed it is and look forward to using the replacement.

    Purchased this smoker in December of 2020 after looking at it for some time and have since had some time to put it to work. Build quality of the smoker is excellent, if I could change one thing I would say to beef up the handles but that isn’t a deal breaker. Only word of caution I would give is that the smoker runs more accurate with loads of at least 10 pounds. So if your making small batches of jerky this may not be the smoker for you, however for 10-25 pound batches of summer sausage and bologna it holds temperature with a variance of 10 degrees or less and with an electric smoker you cant ask for more than that.

    Well built, Made in USA , my first try with this smoker here in Michigan 26 degrees outside and unit had no problem reaching and maintaining 250 degrees. The roof top design is very clever and useful also helped when I was cleaning before first use by removing roof and giving access through the top. No regrets on purchase.

    First, the plus side – physically a great cabinet, well-designed (I love the removable roof for hanging long sausage and salami), huge interior.

    It comes with one serious downside – the Novus temperature controller is absolute junk. The chamber temperature see-saws 20 to 30 degrees F, and it is *always* hotter than the set point. E.g. if you set it to 110, it is going to swing between 120 and 145; if set to 175, it’s going to cycle between 155 and 185. It blows my mind that they won’t put a proper PID controller in such an expensive box. After some back and forth with customer service, they gave me the wiring diagram for the thing, and I acknowledged that I was going to void the warranty by installing an Auber PID controller.

    As long as they use the Novus as their controller, I would recommend against this.

    The smoke comes from the removable sawdust pan which is heated by an element beneath the pan.

  4. Going to use this for chicken and pork butts, ribs,brisket and salmon and jerkey. Not really doing sausage or large amounts of meat. Just a family of four that needs an electric smoker. Will this work for my needs. Thank You

    You might want to consider the 30# Digital Smoker, 19-1011 for your needs. I think it has a bit more interior space. Both are great smokers, but you'll also be saving money and gaining a few more cubic inches!

    Yes, we use the same controller for the 20#, 30#, and 50# smokers. Its quite versatile

  10. Per Lloyd's review on 12/8, it seems that the smoker runs hotter than the setting would indicate. Why is that? If it is set at 200 degrees, what sould I expect the temperature to run at?

     The smoker will run at the temperature which it is programmed, but if you require precision accuracy I would place another thermometer inside the smoker as a redundancy to monitor the temperature. I own the same smoker and never have any issues with temperature.

    The hole on the side is used for either a smoke generator, or a steam cleaner attachment which we used to sell. You can remove the insulation if you choose to.

    Our smokers are just that... SMOKERS. They are designed to smoke and bake/slow cook. They are not Smoker BBQ's, or Smoker Ovens. For optimal smoking temperatures, we know from decades of experience that higher temperatures are not required for quality sausages and meats. Lower temperatures, time and patience are what produce quality smoked meats and sausages. This is also why we choose to use sawdust and not pellets or wood chips. Sawdust has a cleaner smoke at lower temperatures and far less creosote. Creosote is what imparts the acrid bitter flavor on overly smoked products.

    Yes, the handles on the back of the smoker are removable, but they serve a dual purpose. The handles act as a support for the roof when tilting backwards so you can load the smoker from the top without the need to lift the roof off and setting on the ground.

    The empty smoker can be used to cold smoke, but you will need either a "smoke pistol" or "smoke/sawdust maze" to do so.
