20 lb. Digital Stainless Steel Smoker includes a digital control with internal temperature sensor built in. This model is made specifically for the home user. Smoke meat, fish or jerky on the 3 removable shelves or hang sausage for smoking on the 3 wood dowels.

    Hi. Regarding the 20# unit- How closely (accuracy) can the temp be controlled? Is this a "PID" controller? Can the top vent be closed? Does it have a damper for this? Can the unit it be left out in the rain uncovered during use? Does this have both a box thermostat and a meat probe- in other words, (2) probes? Does this have both a box temp readout and a meat probe readout? Can you sell these with no electronics and no provisions for electronics- just with a blank cover? If so, how much? Are the door and roof both insulated? Does the door have a gasket? I am not a competitor. I am just trying to not have to build one of these from scratch. I can send you my design for a control system if you want, with a note that you can use it for free. I am not in this or a related business- just trying to get a smoker as simply as possible. Thnx

    The smoker is fully insulated and does not have a PID controller. The Bluetooth thermometer has 2 probes. It has a damper on the chimney. We do not sell these empty, and they should be stored in a garage or under a cover when not in use. Please read the description of the smoker below the pictures on our website.

    The 20# smoker will do just fine for a small family. It will easily go up to 225F, as this is the maximum factory pre-set temp. This is a smoker, and not a BBQ oven, so it will cook low and slow, and is a perfect temp to cook brisket, ribs, turkeys, chickens, etc.

    1 pan of packed sawdust should last about 45 min to 1 hour, depending on the temperature

    Yes. You can drill a hole into the side of the smoker. I've instructed others how and where to install it.

    For cold smoking, I use an A-MAZE-N SMOKE TRAY, so yes with the power turned off it will work as a COLD SMOKER

  10. Hi, Thanks for your response in advance. Is every part and every inch of this product stainless steel? No carbon steel in there that rusts? By the way I owned and operated one of your early early smokers in 1985-1990. It had only 1 inch insulation and it was still doing OK in the Winter. I visited your store in Buffalo, once back the., Still the same place? I was in Virginia then, now in Colorado. I still have a very nice letter from the Founder. 2nd question:

    Ever inch of our smokers (except for the electrical components) are made of 304 stainless steel, and stuffed with heavy rigid insulation. I have used my 30# smoker in -3F winter conditions, with no issues holding heat. Temperature recovery times were quick after reloading the sawdust pan too!

    All of our smokers are insulated with rigid 2" thick insulation. I have used my 30 lb Country Style smoker in -3F (because I'm crazy) temperatures in Buffalo with no issues. The internal smoker temperature recovers quickly after opening the door even at those frigid temperatures!
