Description
Make Dry Aged Steaks Efficiently and Consistently Every Time!
Add value to your beef by aging it with confidence in a Commercial Dry Ager made specifically for aging sides of beef and other primal cuts for deliciously tender dry aged results. Improve the texture, aroma and concentrate the flavor of your Prime cuts in a controlled refrigeration environment.
Humidity stays at or near 55% RH to encourage the movement of moisture to the surface of your meat cut, while minimizing the thickness of the drying exterior as with standard refrigeration units. There is NO drainage needed for this Ager!
Temperature is adjustable from 33 to 40F, the sweet spot of aging is easy to find. Age your whole Ribeyes, Primal/Retail Cuts and Roasts at a slightly higher temperature to allow for native enzymes to break down the tough parts of the lean muscle tissue, then once they are aged to your liking (21-45 days) wrap and lower the temperature for longer storage!
With the two-door model, each door opens a separate cabinet interior that can be controlled to different temperature setting.
This Ager encourages clockwise air circulation within each section between shelving at spacing to fit your meat while circulating air from Back to Front motion. This type of dynamic air movement prevents certain sections from drying more than others and encourage air flow throughout the entirety of the cooler.
Clear tempered glass door provides a viewing window without opening and protects against UV-light to ensure the highest quality aging.
Lockable casters and also permanent legs to set down for permanent placement in your facility.
