A well spiced, mild-hot, coarsely ground sausage. Perfect proportions of white and black peppers, counterbalanced with garlic and hints of onion. Unlike the overly difficult dry-cured pepperoni recipes, the one included with this item is for the cooked variety. While you can use 100% pork for this recipe, dropping it down to 50% with the other half being lean beef chuck works exceptionally well.

Uses Insta Cure No. 1 and stuffed into a casing of your choice (Insta Cure No. 1 and casings sold separately).

Makes 50 lbs. Recipe on package.

Good, strong, fresh spices! March 19, 2019

I normally make my own spice blends but wanted to try making smoked Pepperoni and The Sausage Maker has a recipe made exactly for that.  Plus, it was on sale and rounded out my order so I could receive free shipping.  When the spice mix arrived, I opened the box only to find that the ring around the top of the jar lid had been broken during shipping.  I took a couple of photos and emailed them to The Sausage Maker and they INSTANTLY shipped me another jar of the spices by rush delivery.  I had my new spice blend within a couple of days with ZERO hassle!  That's why I love this company so much, they have excellent products AND they stand behind them all the way.

I have used many of the Sausage Maker seasonings (20 or so) and enjoyed them all. This was my first big fat loser. As the prior post stated followed all instructions to the letter and this tastes like a very bland bologna. Zero pepperoni flavor. Based on other reviews I think we may have gotten a bad batch or something.changed because this tastes nothing like pepperoni. I wasted some good deer and pork trim on this.

Total Disappointment February 10, 2019

I used this seasoning mix to make 20 lbs. of Smoked Pepperoni. Each ingredient - meat (80/20 blend) and spice - was weighed out on a calibrated digital scale, the cure was measured exactly with a metal measuring spoon. The mixture was thoroughly mixed, stuffed and smoked according to package directions. A digital thermometer was used (with the probe fully inserted) to check for the exact 152 degree internal temperature. When reached, each pepperoni was placed in an ice bath until internal temperature reached 105 degrees and then hung to dry. The taste of the finished product turned out to be bland and tasteless in my opinion. There was no bite, no zing and no heat. Again, a total disappointment that I will not ever buy again. A waste of money, a waste of meat, a waste of effort and a waste of time.
