I use these casings for my pepperoni and love the way they fill and tie off. I don't get any blow-outs at all. I don't smoke my pepperoni but I do hang them in a dry, cold area for up to three weeks after getting the sticks up to 160 degrees  for an hour. After the heat they are allowed to cool naturally and then are wiped and hung. I spray them with a mold retardant a day or so before I take them down, give them a quick wipe and then they are off to the package. The casing does a nice job of shrinking with the meat as they dry so air pockets simply don't happen yet just before slicing for use the casing easily peels off. Great product here and the perfect "pizza" pepperoni size.
