An instant hit here at the Sausage Maker! This was an excellent customer recipe that he let us make into a pre-mixed seasoning so we could make it available for everyone. It strikes a perfect balance with both cheeses, pork and spices. A fresh sausage with cheese, do not smoke. After mixing seasoning into meat mix in 2 cups cubed Mozzarella and 2/3 cups grated Romano Cheese for a 10 lb. recipe. The shelf-life is short, freeze/refrigerate whatever is not cooked and eaten.
