If you like the taste of kielbasa but also enjoy a spicy kick in your food, your on the right page. The spiciness is not overpowering; leaving the rest of the ingredients their tasty place in the recipe. A must try for all sausage lovers, enjoy!
The recommended 5 oz. per 10 lbs of meat is based on the formulation we used and found to be nicely balanced, for added heat simply add a small amount of Cayenne Pepper to taste.
When smoking, use Insta Cure No. 1 and Soy Protein Concentrate, stuff into a 35-38 MM Hog or collagen casing (Insta Cure No. 1, Soy Protein Concentrate and casings sold separately).
