A blend of spices for fresh Greek Turkey Sausage. After mixing seasoning in thoroughly, add 1 1/2 lb. feta cheese, 1/2 cup fresh onion and 2 cups chopped spinach for a 10 lb. recipe. We were taken aback when trying this recipe, the 3lbs of pork trimmings we added to the 7lb of turkey really moistened and enhanced the final taste of the product. This is a fresh sausage with cheese, do not smoke. This recipe recommends 22-24mm sheep casings which will make delicious snack sticks but for small sausage use 29-32mm hog casings.
