This is an amazing book and a must have for anyone processing meat. There’s so much knowledge in these pages about everything you need to know and how to do it. The recipes are amazing as well! Favorite so far is the Canadian Bacon!

Already read a lot of the book. It is excellent! Very easy to understand. It does a great job of explaining what to do, and more importantly, why to do it. It's great to see how much focus is given to safety.
