Gelatin is a binding agent. For use when making head cheese, souse and other lunch meats. Many say that gelatin supplementation helps improve joint function. 1 lb. package.

Gelatin Powder has a maximum usage amount of 3.5% of total weight (including meat/spices/water) for sausage.

0.035 lbs. (or 0.5 ounce) of Gelatin per 1 lb of meat to add and mix in with ground meat.

For making headcheese, souse or other aspic recipe with whole-muscle pieces, use 1 cup Gelatin powder mixed in with 4 cups warm water to dissolve, prior to adding meat pieces and cool to solidify.

Storage of gelatin powder should be in cool, dry place at temperatures at or near 65F (not above room temperature)
