Thin yet durable Collagen Sheets are used to wrap whole-muscle cuts for smoking, netting, aging or dry curing. Traditionally used for making Capicola and smoking ham. Adheres to meat and allows for breath-ability while drying and smoke penetration for adding smokey flavor. Sheets contain tiny perforations for permeability.

5 of 5 Perfect curing Lonzino - Capicollo and Bresaola September 20, 2021

I used these sheets for curing Lonzino, Capicollo and Bresaola. Not only was the process easy, the curing process was shorter then normal. I wrapped the meat with the collagen sheet, covered it with the netting and hung it.
The results were excellent. My Lonzino tasted just as well if not better then prosciutto.
