I have been making a fair bit of coppa lately and used an ad hoc rub. I tried some of my leftover next to this and was pretty close. It has a notable fennel note that is stronger than what I had, but actually prefer this combination. Have not tasted the final product because it is still in the chamber, but will definitely have consistent results going forward. Plus, if I want I can always add some thyme, heat or other herb to tweak any individual coppa...
