Description
 

24" long and approximately 2-3/8" when stuffed. This casing is made for use with dry-cured sausages in particular as it contains a protein coating on the inside that gives them the ability to cling to the meat as it is drying. Soak 10-30 minutes in tap water before using. Not edible. Stuffing capacity: approx. 2 1/2 lbs.

Good casings February 14, 2019

These are good casings if you want or require a protein lined casing for your sausage. They do not come pre-tied on one end, but I prefer to tie my own anyway. I bought these for summer sausage, and was a little disappointed in the finished product. The casings secured so well to the product, that it stuck to the meat, and did not peel easy. That is NOT the fault of the casing, it is mine. I used the wrong one for what I was making.  The casing worked very well for its purpose, and adhered to the meat with no shrinkage or expansion.  Perhaps better used for dry cured sausage.  That was the only reason I gave it 4 stars -
