I have been using this casing since it was first sold by TSM and love it. We run a lot of skinless kielbasa in this casing (I know, not traditional but I build what we want to eat). It has lower water and smoke permeability than natural or edible cellulose. It has been a bit more forgiving to drying out the sausage, but still allows decent smoke penetration. With this casing I have been able to remove all the binding additives from smoked sausage recipes without it drying out or falling apart. It doesn't hold links as well as a natural casing in the smoker but for the durability and the way it strips that is a small price to pay. It also makes nice sized rings.
