23mm (15/16”) Vegetarian Sausage Casings

Our highly popular vegan sausage casing looks and tastes remarkably like a fresh collagen casing. We recommend using them with any fresh, small-diameter imitation meat-, fish-, vegetable- or fruit-based sausage for sturdy handling and a classic sausage snap. These casings are very tender, so stuff carefully and bring your temperature up very slowly while cooking. Stuffing capacity is approximately 10 lbs. per strand (one strand per package).

Try pan frying these edible imitation sausage casings for no longer than 3-4 minutes with (preferably) no oil, on medium/light heat. If smoking, dry at 140-150F for at least an hour with dampers fully open, then add smoke and cook at temps below 175F, always keeping dampers fully open. These can be microwaved as well.

For storage, keep in a sealed bag at ambient temperature and humidity, ideally 45-60%. Shelf life of this product is 2 years.

The vegan casings worked.  This was my second time ordering and using them.  My only suggestion is to include cooking instructions.  There were none, and these do not act like animal-based casings.  First, they're water soluble, so your fingers have to be absolutely dry.  (These are apparently made from a seaweed extract, and trying to figure out why something that was once a plant growing in the ocean can be WATER SOLUBLE makes my brain hurt!)  Second, different instructions picked up on several websites said grilling should be done at relatively low temps and only for a few minutes per side...baking should be no higher than 300F bringing the temp up gradually, and smoking should be at a relatively low 150F.  Having these instructions included would have been useful.  Overall, I'm happy with the product.

I used these to make a vegan version of my favorite dish, boudin. It was really fun and came out great. My only complaint is I wish they were available in a wider size. These are a little skinny and funny looking.
