Often times Full Speed grinding can cause fats in the meat to smear, muscle tissue to breakdown and mash along the way to the knife and plate. This can make the burger gritty and dry if the tissue is worked too hard prior to grinding. With The Sausage Maker's 8-Speed Meat Grinder you choose the speed based on what you are grinding.
