Introduction:

Congratulations! You have purchased an electric grinder distrubuted by a company with 30 years experience in creating products for making homemade sausage. The materials used will give you years of trouble-free service, provided that you carefully follow the use and maintenance instructions in this manual. Please remember that this grinder must always be monitored by a qualified operator when in use.

Grinding Meat:

Great tasting sausage, like most foods, depends on the freshness of the ingredients. To ensure that yours has the best flavor possible, the meat should be ground the same day that the ingredients are added. The equipment used to prepare it should be thoroughly cleaned before use. For best results, both the meat and the meat hopper should be chilled before grinding to preserve freshness. For more tips on how to get the best performance from this machine, we recommend that you purchase a complete book on meat handling. The most thorough text of this subject is Great Sausage Recipes and Meat Curing by Rytek Kutas. This book is available on our website as well as through many bookstores and some local libraries.

Important Safeguards:

1. Read ALL of these instructions thoroughly before using.
2. Save these instructions for future reference.
3. Never leave your grinder unattended.
4. Close supervision is necessary when this grinder is used near children. NOTE: This machine is not intended for use by children.
5. Electric grinders are major appliances and should only be used by a person that is familiar with proper meat handling procedures.
6. As with any electrical appliance, basic safety precautions should always be followed.
7. To protect against electrical shock, do not immerse cord, plugs or grinder body in water or other liquids. Avoid using this grinder in the rain.
8. Do not operate any appliance with a damaged cord or plug, after the appliance malfunctions, or has been damaged in any manner. If damaged, repairs should only be made by a qualified electrician.
9. Unplug this grinder when not in use or before cleaning or servicing.
10. Extreme caution must be used when moving any appliance. Do not move this grinder while operating.
11. When moving this unit, be certain to hold it by the motor housing with both hands. Do not hold it by the meat tray.
12. Only operate this grinder on a flat, dry surface.
13. Do not grind bone or other hard materials with this grinder.

Operating Instructions:

Our grinders are about as simple to operate as your kitchen stove. The proper and efficient operation of this grinder rests with you. This appliance is equipped with a three position switch: On, Forward and Reverse. The grinder has the capacity to grind about 400 lbs. of meat per hour. Results may vary depending on the cut of meat, meat temperature and other variables.

ONLY OPERATE THIS APPLIANCE AFTER YOU HAVE READ AND UNDERSTAND THESE INSTRUCTIONS. IF YOU HAVE ANY DOUBTS, CONTACT THE MANUFACTURER.

1. Wash all parts that will contact the meat before using.
2. Chill the meat tray and auger in a refrigerator for 30 minutes prior to use.
3. Make certain that the meat is well chilled prior to grinding.
4. Place grinder on a dry flat surface.
5. Place the grinding head into the opening on the motor housing and push all the way into the collar on the head.
6. Hold the head in place with one hand and turn the locking knob clockwise to tighten.
7. Place the auger into the grinding head with the pin facing out.
8. Place the knife on the pin with the flat face of the knife facing out.
9. Place the grinding plate on the pin.
10. Screw the collar onto the grinding head until tight. DO NOT OVER TIGHTEN AS THIS MAY DAMAGE THE KNIFE, PLATE AND GRINDER MOTOR.
11. Place the meat tray on top of the grinder housing. NEVER OPERATE THIS GRINDER WITHOUT THE TRAY IN PLACE.
12. Cut meat into strips small enough to fit in the tray opening.
13. Push the meat with plastic meat pusher. NEVER PUSH MEAT INTO THE GRINDER WITH YOUR FINGERS.
14. If the grinder jams due to overloading or hard materials in the auger or knife, switch the unit to reverse. If the jam does not clear, turn the unit off, unplug it and disassemble to clear.
15. If the meat is not dispensing evenly, check the tightness of the collar. If the meat forms a paste, check the knife and sharpen it if needed.

Cleaning and Maintenance:

Your grinder has been designed to give you years of trouble-free service, provided that it is properly maintained.

1. After each use, unplug the grinder and disassemble it. Do not try to clean it while it is still plugged in.
2. Wipe down the motor housing with a good cleaner or detergent. If possible, avoid scouring the surface as this will mar the finish.
3. Wash the non-electrical parts in hot soapy water.
4. Allow to dry thoroughly before reassembling the grinder.

Warranty:

The Sausage Maker, Inc., through its Distributors, warrants each new product sold by it to the initial user to be free of defects in material and workmanship for a period of one year from the date of sale of the equipment. With respect to the sale of spare parts, such warranty period shall be three (3) months from the date of sale.

The Sausage Maker, Inc. will provide a new part or repaired part, at its election, in place of any part which is found upon inspection to be defective in material and workmanship during the period described above. Purchaser must present proof of purchase and purchase date at the time of exercising this warranty.

This warranty does not apply to failures occurring as a result of abuse, misuse, negligent repairs, corrosion, erosion and normal wear and tear, alterations or modifications made to the product without express written consent of The Sausage Maker, Inc. or failure to follow the recommended operating practices and maintenance procedures as provided in the product's operating and maintenance publications. The warranty provided herein does not apply to equipment sold hereunder but manufactured by others as they are warranted by their respective manufacturers directly to the user.

This warranty is in lieu of all other warranties (except of title) expressed or implied and there are no warranties of merchantability or of fitness for a particular purpose.

Limitation of Liabiity:

The remedies of the user set forth under the provisions outlined above are exclusive and the total liability of The Sausage Maker, Inc. or its distributors with respect to this sale of the equipment and service furnished hereunder, in connection with the performance or breach thereof, or from the sale, delivery, installation, repair or technical direction covered by or furnished under this sale, whether based on contract, warranty, negligence, indemnity, strict liability or otherwise shall not exceed the purchase price of the unit of equipment upon which such liability is based.

The Sausage Maker, Inc. and its Distributors shall in no event be liable to the user, any successors in interest or any beneficiary or assignee relating to this sale for any consequential, incidental, indirect, special or punitive damages arising out if this sale for any breach thereof, or any defects in, or failure of, or malfunction of the equipment under this sale whether based upon loss of use, lost profits or revenue, interest, lost goodwill, work stoppage, impairment of other goods, loss by reason of shutdown or non-operation, increased expenses of operation, cost of purchase of replacement power claims of user or customers of the user for service interruption whether or not such loss or damage is based on contract, warranty, negligence, indemnity, strict liability or otherwise.
